Nixtamalisation, soaking maize in lye solution, was invented 3,500 years ago in Mesoamerica. This process unlocks niacin (vitamin B3) from maize, making it nutritionally far more valuable. European populations who adopted corn without nixtamalisation developed pellagra (niacin deficiency). German pretzels are dipped in lye solution before baking, the alkali reacts with heat to produce their distinctive shiny brown crust and chewy texture. Traditional cold-process soapmaking still uses lye: a controlled saponification reaction converts fat into soap and glycerine. The lye itself is not present in finished soap, it is completely consumed in the chemical reaction.
