"Much" se usa con sustantivos incontables (que no se pueden contar individualmente); "many" se usa con sustantivos contables en plural.
Determinante / pronombre: gran cantidad de algo INCONTABLE. "Much water" = mucha agua (no puedes contar "aguas" individuales). "Much time" = mucho tiempo. "Much money" = mucho dinero. "Much traffic" = mucho trafico. Se usa principalmente en oraciones NEGATIVAS e INTERROGATIVAS en el habla cotidiana: "I do not have much time." / "How much does it cost?" En oraciones afirmativas es mas formal: "There is much to be done."

Tambien mas comun en negativas e interrogativas, pero se usa en afirmativas sin sonar formal: "There are many options."

En el ingles cotidiano moderno, "much" y "many" en oraciones afirmativas han sido casi completamente reemplazados por "a lot of" o "lots of". "I have much money" suena anticuado o extremadamente formal. "I have a lot of money" es lo natural. Sin embargo, en negativas e interrogativas, "much" y "many" siguen siendo la opcion natural: "I do not have much money" (mejor que "I do not have a lot of money"). Los examenes de ingles (IELTS, TOEFL, Cambridge) siguen probando much/many intensamente porque es un indicador clave del nivel gramatical del hablante.
